Classic bulk ice creams

The display case is the shop window for bulk ice cream: the catalog recommends alternating colours and placing the hardest creams at the ends and the softest in the centre, keeping the cabinet at –16 to –18 °C (switching it on 3 hours before loading) and wetting and rinsing scoops and spades between uses.
