Beef sweetbreads
Heart sweetbreads are the rounder and more prized; neck sweetbreads are more elongated. Both have a delicate, creamy texture inside.
They are usually blanched, peeled and then seared on the griddle or grill until crisp outside, or battered and fried. They are a classic of the Argentine parrilla and of tapas cooking, served with coarse salt and lemon.
