Duck magret

The meat is red, juicy and full-flavoured, closer to red meat than to poultry. As well as the whole-piece blister pack, the catalogue includes two new pre-cut options for foodservice: chop cut and tataki cut.

Cook it skin-side down first in a pan over medium heat so the fat renders and crisps, and finish it pink inside. It goes well with red-berry, orange or sweet-wine sauces. The tataki cut is meant to be seared on the outside and served in thin slices.
