Yearling ribeye
Yearling beef (añojo) comes from male or female animals aged 12 to 24 months, born, raised, fattened and slaughtered in Spain, with a live weight of around 500 kg. The meat is bright purple-red, tender, juicy and flavourful.
This is the cut that yields entrecôte and rib steaks. It can be sliced in the kitchen for griddle, grill or charcoal cooking, or roasted whole in the oven and served sliced.
